Super simple – great tasting chicken with pesto!
I wanted a simple recipe that included my 2 favorite foods – pesto and chicken.
4 boneless chicken breasts
1/2 cup jarred basil pesto
1/2 cup mozzarella cheese, shredded
In an 8×8 pan, lay out the chicken breasts. Spoon the basil pesto over the chicken and spread it out. Top with shredded mozzarella. Bake @ 350 for 25 minutes, uncovered.
Serve with quinoa cooked in chicken broth.
