Philippine Cuisine: Chicken Adobo

Adobo is one of the most widely known Philippine specialties. It is a term referring to a concoction of vinegar, soy sauce, pepper and garlic, cooked with the meat of one’s choice. This can be done with pork, beef, fish, and even vegetables.

Ingredients:

1 big chicken

1 cup vinegar

1 head garlic, minced

1 bay leaf

1 tsp salt

1tbsp soy sauce

1 tsp sugar

monosodium glutamate

a dash of pepper

lard

 

Procedure:

Clean the chicken and cut into serving pieces. Drain. In a saucepan, marinate chicken pieces in vinegar, garlic, bay leaf, pepper, sugar, soy sauce, salt, and monosodium glutamate for 30 minutes. Cover the saucepan and let simmer until chicken is tender and the liquid has practically evaporated. Add lard and fry chicken meat until brown. Add seasoning. Serve hot. Good for six persons.
