Pineapple Chicken
This is a very tasty Chinese dish.
Ingredients
- 1lb of chicken
- 1 medium onion
- 1tbsp soya sauce
- 1 clove garlic (crushed)
- 1tbsp white wine vinegar
- 1tsp ground ginger
- 4 slices pineapple
- 1tbsp cornflour
- 1/4 pint chicken stock
- 4tbsp pineapple juice
- 3tbsp oil
Method
Dice chicken, slice the onion, place cornflour in a bowl and mix in the pineapple juice, chicken stock, vinegar and soya sauce. Heat oil and add garlic. Brown chicken until moisture has evaporated. Add onion and ginger and stir fry for 2 minutes. Mix in the pineapple. Stir in cornflour mixture and pour into the wok/pan. Stir until thickened to a translucent sauce.
Note- You can also use turkey instead of chicken if you prefer.
