Pomelo Chicken Salad
A side salad or appetizer recipe made from Pomelo (or grapefruit), shredded chicken and patis.
Pomelo Chicken Salad
This salad is more of an appetizer salad or a side salad to eat with a main course. I adapted my recipe for this from the show Chef to Go on GMA. I didn’t have all the ingredients on hand that the chef put in like the Crunchy Fried shallots, balsamic vinegar and coconut cream when I made my salad but I made do with the available ingredients.
For the sauce, I put 1 part Patis, 1 part plain white vinegar, 1 part brown sugar, calamansi juice (a cut up about 5 small calamansi and squeezed the juice in) and salt and pepper. Then i mixed about half a pomelo (or pink grapefuit), shredded and about 1/4 cup shredded chicken. After adding the sauce to the pomelo-chicken mixture, I added fresh Cilantro (or Wansoy in Tagalog) to taste. I like Cilantro a lot so, I actually added the entire bunch that I bought. By the way, you can buy fresh Cilantro at the vegetable section of your grocery. It’s usually by the Parsley (or Kinchay) and looks very much like it as well. However, you can tell the difference by smelling the leaves.
I enjoyed this salad as well but, again, more as a side salad to a main dish. Try it yourself sometime….

This sounds delicious. What is patis and what is calamansi sauce, though? Where would I find them? Thanks!

hi sorry for the late reply. Calamansi juice comes from a Filipino fruit. I searched it from the internet and its also sometimes called Calamondin.
If you don’t have this where you are, you can actually replace it with lemon or lime. It has a similar citrus-sy taste.
Patis is a salty filipino condiment derived from fish like anchovies. If you don’t have this available, you can just use something salty to flavor like a bit of soy sauce or just plain salt.
