Recipe for Chicken Parmigiana

4 pieces of boneless chicken breasts (with the skin peeled and cut in halves)

¼ cup of flour

2 tablespoons of butter

Salt

Pepper

2 tablespoons of olive oil

1 ½ cups of tomato sauce

8 oz of thinly sliced mozzarella cheese

½ cup of grated parmesan cheese

4 tablespoons of parmesan cheese (grated)

  
The chicken breasts should be properly cooked before the casserole is gathered. To save more time, one may decide to do prior to the preparation time of the chicken parmigiana. One may chose the option of cooking the chicken parts in the morning hours if the preparation of the parmigiana will be in the evening. Pepper and salt should be moderately sprinkled on all sides of the cut chicken breasts before being coated with the flour. The chicken is then placed in the boiling skillet of preheated olive oil and butter. They should be sauté for about 4 minutes before being flipped and sauté for extra 5 minutes, by this time the chicken should be lightly browned and firm when touched.

The next step is preheating the oven at 3500 F, the bottom of a 13 x 9 pan properly oiled and ½ cup of tomato sauce spread over the bottom of the pan. Then the chicken breasts are then placed in the tomato sauce. The 4 tables of grated parmesan cheese is then sprinkled on top of the chicken breasts and the remaining tomato sauce poured over it. Finally, the sliced mozzarella cheese is placed over the casserole and the ½ cup of parmesan cheese sprinkled over it. The pan is then covered with a foil and the contents baked for about 30 minutes and it is ready.
