Satay Chicken

This exotic peanut satay chicken dish presents us with a mouth watering meal that is easily whipped-up and surprisingly swiftly at that. With a strong Thai influence this succulent satay chicken is marinated in a peanut-based marinade and then cooked on skewers along with a peanut-based satay sauce.

Satay Chicken with Rice and Green Onions

Ingredients

  • 12 Skewers (bamboo or metal)
  • 700 Grams of Chicken Tenderloins
  • 6 Green Onions
  • 1½ Cups of Jasmine Rice
  • 1 Cup of Peanut Butter Satay Sauce or Peanut Sauce or Barbeque Satay Sauce
  • ¼ Cup of Coconut Milk
  • 2 Garlic Cloves
  • 1½ Tablespoons each of Soy Sauce and Honey
  • 1 Tablespoon of Peanut Oil
  • 1 Teaspoon of Turmeric
  • Olive Oil or Non-Stick Cooking Spray (for cooking the chicken)

Method

  1. If you are using bamboo skewers soak them in water for ½ to 1 hour prior to threading the chicken tenderloin halves onto them
  2. Crush the garlic (a garlic press is the easiest way to do this). Cut the chicken tenderloins in half lengthways. Slice the green onions diagonally.
  3. The Marinade – Using a medium sized bowl thoroughly combine the soy sauce, honey, turmeric, crushed garlic and peanut oil
  4. Once the marinade is ready add the chicken pieces. Stir and turn the chicken pieces to ensure that they are well coated all over with marinade. You could do this by putting the thoroughly combined marinade mixture into a zip lock plastic bag and then add in the chicken pieces. Seal the bag closed and shake vigorously to coat the chicken pieces with marinade.
  5. Now thread the chicken pieces onto the skewers. Once threaded place each skewer in turn onto a dinner plate. Continue threading the marinade coated chicken pieces onto skewers until all of the chicken has been skewered and placed onto the dinner plate.
  6. Spoon the remaining marinade over the chicken skewers. With this done cover the dinner plate with the chicken skewers on it and then place them into refrigerator to marinate for at least 1 hour.
  7. In the meantime cook the rice in accordance with the instructions on the packet. Once the rice is cooked use a fork to separate the grains (we do not want any rice clumps). Next up add in the onions and stir to distribute the sliced green onions more or less evenly throughout the rice.
  8. Take a small saucepan and add in the ¼ cup of coconut milk along with the cup of satay sauce; be that the Peanut Butter Satay Sauce or Peanut Sauce or Barbeque Satay Sauce, depending on which you are using. You can also mix and match the various satay sauces to reflect your own preferences.
  9. Give the sauce ingredients a quick stir and then place the saucepan over a medium heat. Cook your sauce ingredients until they are heated right through (usually takes from 2½ to 3½ minutes). Do not forget to stir continually while doing this.
  10. Preheat your griller, barbeque grill, griddle, hot plate etc. to medium. Once your cooking surface is up to temperature; oil it or spray it with non-stick cooking spray. Give your chicken skewers a quick oil/spray and immediately place them onto your cooking surface.
  11. Cook the chicken skewers for about 6 minutes. Remember to turn them a couple of times. You will need to pay attention to ensure that the peanut satay sauce does not burn.

  12. Once cooked place your chicken skewers onto a serving platter or dinner plates and drizzle with satay mixture (see Figure 2 Above)

Serving

You will find that these portions will be sufficient to satisfy 4 adult servings. These satay chicken skewers are delightful when served on a bed of rice accompanied by a selection of steamed mixed vegetables. They also make great finger food for parties and snacks alike.

You might like to try them served on pita bread. Heat the pita bread. Remove the satay chicken from the skewers and place onto your warm pita bread. Load up with a fresh green salad, egg and grated cheese. Apply your favorite condiments and then roll the pita bread kebab style and enjoy!

    Once again, I don’t like peanut butter, but nice recipe.
