Simple to Make Chicken Curry

An easy to make chicken curry.

This recipe is for two people, if more is needed just double the ingredients.

FIRST STAGE = THE CURRY GRAVY (This can be made on the day or made in bulk and frozen for use anytime)

  1. Chop four medium size onions and fry in wok or frying pan
  2. Chop whole garlic bulb and add to pan
  3. Add some chopped or powdered ginger to pan
  4. Add chopped fresh chillies if you want a hot curry
  5. Add finely chopped red pepper
  6. Add two tablespoons of curry powder and one teaspoon of chili powder
  7. Add two tablespoons of tomato paste or puree
  8. Add a pinch of salt
  9. Fry all ingredients until the onions are nicely browned
  10. Add two cups of water and using a blender blend all ingredients until a smooth thick soup consistency is achieved

Put your curry gravy to one side or freeze

SECOND STAGE = MAKING YOUR CURRY

  1. Fry a good knob of butter in an individual curry dish or small frying pan for two people
  2. Add a teaspoon of garam masala powder and fry
  3. Add a teaspoon of chili powder and fry
  4. Add some garlic paste or ginger and garlic paste and fry
  5. Now add some chopped Chicken breast and fry until cooked
  6. Now is the time to add some more chillies in you want a hot curry
  7. I like spinach in my curries so add spinach now if you like it
  8. Slowly add some of your curry gravy to the pan and keep stirring until all ingredients are mixed
  9. At this point add a teaspoon of sugar and mix
  10. Add salt and fresh coriander to taste
  11. Serve with rice and an Indian bread
