Southwest Baked Chicken

Have a taste of the American Southwest with this original recipe! This dish serves four people, perfect for any family dinner!

 Southwest Baked Chicken (serves 4)

  • 4 Boneless/skinless Chicken Breasts
  • 2 Tablespoons Olive Oil
  • 20oz Chili without meat (homemade or canned)
  • 1/4 cup BBQ sauce
  • 1/2 cup salsa
  • 1 teaspoon Mongolian fire oil Garlic to taste (minced) Ii’s recomended that you use 1/2-1 full clove
  • 1/2 cup olives,
  •  2 cups of sliced/shredded cheese (sharp Cheddar is best)
  • 2 medium sized tomatoes (hot-house are best)
  • Add all fo the following ingredients to add taste: Tabasco, Salt, pepper to taste.
  • Place chicken in an un-greased, oven safe, baking dish.
  • Mix all other ingredients (except for the cheese) in a bowl, mixing evenly.
  • Pour mix over chicken making sure to cover it completely.
  • Allow chicken to marinate in sauce for 1 hour (in the refrigerator).
  • Pre-heat oven to 400 Fahrenheit and bake for 1 hour and 15 minutes.
  • To create that Southwest effect, serve dish with the chicken covered in a spicy sauce, with a rice/corn side.
  • Add the cheese to taste over the chicken.

   Allow chicken to stand 5-10 minutes after coming out of the oven. Then serve and enjoy!
