Southwest Baked Chicken
Have a taste of the American Southwest with this original recipe! This dish serves four people, perfect for any family dinner!
Southwest Baked Chicken (serves 4)
- 4 Boneless/skinless Chicken Breasts
- 2 Tablespoons Olive Oil
- 20oz Chili without meat (homemade or canned)
- 1/4 cup BBQ sauce
- 1/2 cup salsa
- 1 teaspoon Mongolian fire oil Garlic to taste (minced) Ii’s recomended that you use 1/2-1 full clove
- 1/2 cup olives,
- 2 cups of sliced/shredded cheese (sharp Cheddar is best)
- 2 medium sized tomatoes (hot-house are best)
- Add all fo the following ingredients to add taste: Tabasco, Salt, pepper to taste.
- Place chicken in an un-greased, oven safe, baking dish.
- Mix all other ingredients (except for the cheese) in a bowl, mixing evenly.
- Pour mix over chicken making sure to cover it completely.
- Allow chicken to marinate in sauce for 1 hour (in the refrigerator).
- Pre-heat oven to 400 Fahrenheit and bake for 1 hour and 15 minutes.
- To create that Southwest effect, serve dish with the chicken covered in a spicy sauce, with a rice/corn side.
- Add the cheese to taste over the chicken.
Allow chicken to stand 5-10 minutes after coming out of the oven. Then serve and enjoy!
