Spicey Chicken Salad

For those of you who love spicy foods this one is a great way to get your chicken and your sweet and spicy all in one dish.

Chicken is one of my favorites so I am always looking for new ways to prepare it and I also have a soft spot for chicken salad. Sweet and spicy  I crave and that’s how the following recipe was invented.

  • 3 skinless, boneless chicken breast halves – cooked and diced
  • 1 stalk celery, finely diced
  •  2 green onions, finely chopped
  • 1 Golden Delicious apple, peeled, cored and diced
  • 1/3 cup golden raisins
  • 1/3 cup seedless green grapes, cut in half
  • 1/2 cup chopped toasted pecans
  • 1/8 teaspoon ground black pepper
  • 1/2 teaspoon curry powder
  • 3/4 cup light mayonnaise

Depending on how much chicken salad you want to make if less only use 2 chicken breasts instead of three. Mix all ingredients together and either make a sandwich or you can add a scoopful on top of a garden salad. great as a lunch or light dinner.
