Spicy Chicken Burgers

Try these Spicy Chicken Burgers as a lower-fat alternative to beef burgers.

Note: Spicy Chicken Burgers can also be made with turkey.

Ingredients

  • 1 lb boneless chicken, mixed dark and light meat
  • 1–2 cloves garlic, mashed with a little salt
  • 1/4 medium onion, chopped
  • 1 tbs chile sauce or paste, or to taste
  • pinch of dried basil or oregano
  • 2–3 tbs fresh breadcrumbs; more if needed
  • salt and pepper
  • salad/green onions, sliced diagonally into 1 in pieces
  • slices of  avocado, tomato and cheese (OK, not so low fat!)
  • lettuce leaves
  • oil for cooking
  • toasted hamburger buns or flat rolls
  • additional chile sauce, ketchup, Worcester sauce etc

Preparation

  1. Run the chicken through a grinder or food processor, with the garlic and onion. Add the chile sauce, herbs and enough breadcrumbs to hold the mixture together. Fry a little, taste to check for seasoning; adjust as needed.
  2. Shape into 4 burgers and chill until ready to use. Heat and oil a grill or heat a heavy frying pan and add a little oil. Cook the burgers until brown on both sides and cooked in the centre; 10–12 minutes.
  3. Meanwhile prepare a platter with the trimmings and toast the burger buns or rolls. Have toppings and sauces set out on the table so everyone can choose what they like to top their Spicy Chicken Burgers.

    Something new to put on the grill! We don’t eat beef any more.
