Sweet and Sour Chicken

Here’s a delectable chicken dish with a tangy goodness. It’s also good for parties because you can prepare the chicken in advance and just pour on the sauce later when ready to serve.

Ingredients

1 kilo chicken meat cut into 1 ½-inch pieces

1 ½ cup cooking oil

¼ cup unsweetened pineapple juice

1 pc egg, beaten

½ cup bread crumbs

½ cup cornstarch

1 ½ tsps. Salt

1 Tbsp soy sauce

Sauce recipe

½  cup chicken broth

½ cup pineapple juice

¼ cup pineapple tidbits

2 Tbsps tomato catsup

1 pc carrot, diced

1 pc bell pepper, diced

1 ½ Tbsps cornstarch dissolved in a little water

2 Tbsps sugar

½ tsp ginger, chopped

4 cloves garlic, minced

2 Tbsps vinegar

½ tsp ground pepper

½ tsp fine salt

  • Boil chicken for 10 minutes and drain. Set aside the broth (for sauce recipe)
  • Marinate the boiled chicken in a mixture of pineapple juice, salt, and soy sauce.
  • Add cornstarch and mix well.
  • Dip each piece of chicken into the beaten egg and coat evenly with bread crumbs.
  • Fry in oil until golden brown.  Set aside.
  • For the sauce, mix all the ingredients in a saucepan, except for the pineapple tidbits, bell pepper, and carrot.
  • Stir to dissolve cornstarch.
  • Cook over medium heat, stirring constantly until thick.  Add pineapple tidbits, carrot, and bell pepper.
  • Pour sauce over fried chicken cubes and serve hot.

Tip: The chicken may be fried in advance.  Heat the sweet sour sauce and pour over the chicken before serving.
