Tandoori Style Grilled Chicken

published by pattiann on Jul 24, 2012

I feel like an Indian recipe. Here is my mom’s recipe for Tandoori style grilled chicken.

TANDOORI MARINADE:

1/2 cup plain yogurt

2 Tablespoons lemon juice

2 teaspoons paprika

1/2 teaspoon salt

1/2 teaspoon cumin

1/4 teaspoon ginger

1/2 teaspoon turmeric

1/2 teaspoon ground red pepper

1/8 teaspoon pepper

2 cloves garlic minced

CHICKEN

4 boneless skinless chicken breast halves

8 ( 8 to 10 inch) bamboo skewers

8 green onions, trimmed to 8 inches

GRILL DIRECTIONS: In a small bowl combine all marinade ingredients; mix well. Cut each chicken breast half in half lengthwise. Arrange chicken in a layer in shallow dish. Pour marinade over chicken pieces. turn to coat. Cover; refrigerate 2 hours or overnight.

Soak bamboo skewers in water for 30-60 minutes before using.

Heat grill. Drain chicken, reserving marinade. On waxed paper, line up 1 piece of chicken, 2 green onions facing opposite directions and another piece of chicken.

Skewer chicken and onions with 2 skewers about 3 1/2 inches apart. Repeat with remaining chicken, onions and skewers.

When ready to grill, place skewered chicken and onions on gas grill over medium heat. Cook 15-20 minutes or until chicken is no longer pink, turning once and brushing frequently with reserved marinade and discard any remaining marinade
