Tried and True Best Recipes: Roast Chicken

Are you looking for an easy, inexpensive and delicious roast chicken? Look no further. This is a dish that will become a family favorite after the first bite.

Anne’s Lemon and Herb Roast Chicken

Ingredients

  • One whole fryer chicken
  • Unsalted butter (half stick)
  • One lemon
  • Italian seasoning (find any mix in the dry spices aisle)
  • Kosher salt

Method

  1. Preheat oven to 350 degrees.
  2. Rinse the chicken, remove all the parts in the cavity and place in shallow dish, breast up.
  3. Cut the butter into ¼-inch slices and stick them on the chicken.
  4. Slice the lemon and squeeze all the juice from both halves onto chicken.
  5. Take both lemon halves and insert them inside the chicken cavity.
  6. Sprinkle the chicken generously with the Italian seasoning.
  7. Sprinkle a few pinches of salt onto the bird.

Cooking and Plating:

  • Put the chicken into the oven.
  • Baste the chicken every 15 minutes.
  • Cook at least an hour, possibly longer (depending upon size), until internal temperature reaches 160 degrees.
  • Serve with salad, roast potatoes and Italian bread for a fabulous dinner.
