Tried and True Best Recipes: Roast Chicken

Are you looking for an easy, inexpensive and delicious roast chicken? Look no further. This is a dish that will become a family favorite after the first bite.
Anne’s Lemon and Herb Roast Chicken
Ingredients
- One whole fryer chicken
- Unsalted butter (half stick)
- One lemon
- Italian seasoning (find any mix in the dry spices aisle)
- Kosher salt
Method
- Preheat oven to 350 degrees.
- Rinse the chicken, remove all the parts in the cavity and place in shallow dish, breast up.
- Cut the butter into ¼-inch slices and stick them on the chicken.
- Slice the lemon and squeeze all the juice from both halves onto chicken.
- Take both lemon halves and insert them inside the chicken cavity.
- Sprinkle the chicken generously with the Italian seasoning.
- Sprinkle a few pinches of salt onto the bird.
Cooking and Plating:
- Put the chicken into the oven.
- Baste the chicken every 15 minutes.
- Cook at least an hour, possibly longer (depending upon size), until internal temperature reaches 160 degrees.
- Serve with salad, roast potatoes and Italian bread for a fabulous dinner.
