Turkey with Corn Spoon Bread
Enjoy corn spoon bread with chunks of turkey and a topping of Cheddar cheese.
Things You Will Need
1 can (15 ounces) creamed corn
3 large eggs, separated
2 tablespoons unsalted butter, melted
1 jalapeno pepper, minced
1 scallion, chopped
1/4 teaspoon freshly ground pepper, or 2 tablespoons chopped canned green chillies (optional)
1/4 teaspoon salt
1 ½ cups cooked turkey, cut into 1-inch cubes (about ½ pound)
1 cup grated sharp Cheddar cheese (4 ounces)
1 cup yellow cornmeal
Method
- Preheat the oven to 350 degrees. Lightly butter a 9 inch square baking dish. In a medium bowl, mix together the creamed corn, cornmeal, egg yolks, scallion, butter, pepper and the optional chilli.
- Stir the turkey well.
- Now beat the egg whites with the salt until soft peaks form.
- Fold the beaten whites into the corn mixture. Pour the batter into the prepared baking dish and sprinkle the grated cheese over the top.
- Bake for about 30 to 35 minutes. And check with a fork if it comes out clean.
- Now serve this turkey and corn spoon bread with Fresh Tomato Salsa.
