Valentine’s Dinner
Got a “meat and potatoes” kind of guy to cook for this Valentine’s Day? Try this quick and easy meal.
This is one of my favorite easy meals and it’s wonderful for Valentine’s Day. Dress the room and the table; remember, presentation is everything.
Honey Mustard Chicken
Ingredients
- ¼ C. Honey
- 4 tsp Dijon Mustard
- 2 Tbsp Soy Sauce
- 2-4 Chicken breasts
Method
In a microwave-safe cup, mix honey, mustard and soy sauce. Heat 30 seconds and stir well. Line a baking dish with foil. Arrange chicken in dish. Brush with honey mixture. (You can leave like this in fridge for up to two hours before cooking, if desired.)
Bake in 375 oven about 50 minutes, or until chicken is done all the way through. Turn once during baking; brush with more honey mixture. Save a little honey mixture to brush on just before serving.
Serve with Creamed Potatoes
Ingredients
- 2-3 potatoes, boiled
- 1/2 cup cream
- seasoned salt and pepper to taste
- 6 tablespoons grated cheddar cheese
Method
Cool the potatoes, and peel them. make thick slices.
Beat the cream slightly, and mix it with salt and pepper. Lightly grease a baking dish with a tablespoon of oil. Rub it all over the base. Put 1/3 of the potatoes into the dish. Put 1/3 of the cream over, and then add 2 tablespoons of the cheese. Repeat the layers, ending with cheese. Bake in a preheated 375 oven about 20 minutes, or till the top is nicely browned.
Add a salad or vegetable and a bottle of wine, and enjoy!
