Wild Rice Hot Dish
Hot dish with chicken, wild rice, almonds, and other healthy ingredients.
Ingredients

1 cup of wild rice (uncooked)

½ cup of chopped onion
-
½ cup of butter
-
¼ cup of flour
-
1 (6 oz.) can of mushrooms drained but reserve the liquid
-
½ cup of slivered blanched almonds
-
3 cups of diced cooked chicken
-
Chicken broth
-
1 ½ cups of light cream
-
¼ cup of diced pimentos
-
2 tablespoons of snipped parsley
-
1 ½ teaspoons of salt
-
¼ teaspoons of pepper
Directions
- Preheat oven to 350 degrees f.
- Prepare wild as package directions.
- Sauté onion in butter until it is tender.
- Remove from heat & stir in flour.
- Drain mushrooms and reserve the liquid.
- Add enough chicken broth to make 1 ½ cups.
- Gradually stir into flour mixture.
- Add the cream and cook while stirring constantly until thickened.
- Mix the wild rice, mushrooms, chicken and the rest of the ingredients.
- Put in a 2 quart casserole dish.
- Sprinkle with almond then bake for 25 to 30 minutes at 350 degrees F.
This recipe serves 8.

I like the addition of cream to this recipe. Almonds always are such a nice addition to chicken dishes.
