Wild Rice Hot Dish

Hot dish with chicken, wild rice, almonds, and other healthy ingredients.

Ingredients

  • 1 cup of wild rice (uncooked)

  • ½ cup of chopped onion

  • ½ cup of butter

  • ¼ cup of flour

  • 1 (6 oz.) can of mushrooms drained but reserve the liquid

  • ½ cup of slivered blanched almonds

  • 3 cups of diced cooked chicken

  • Chicken broth

  • 1 ½ cups of light cream

  • ¼ cup of diced pimentos

  • 2 tablespoons of snipped parsley

  • 1 ½ teaspoons of salt

  • ¼ teaspoons of pepper

Directions

  1. Preheat oven to 350 degrees f.
  2. Prepare wild as package directions.
  3. Sauté onion in butter until it is tender.
  4. Remove from heat & stir in flour.
  5. Drain mushrooms and reserve the liquid.
  6. Add enough chicken broth to make 1 ½ cups.
  7. Gradually stir into flour mixture.
  8. Add the cream and cook while stirring constantly until thickened.
  9. Mix the wild rice, mushrooms, chicken and the rest of the ingredients.
  10. Put in a 2 quart casserole dish.
  11. Sprinkle with almond then bake for 25 to 30 minutes at 350 degrees F.

This recipe serves 8.

    Sounds good, I think I will have to make this sometime this weekend when the kids are gone, they aren’t big fans of mushrooms and rice :) . Thankz for sharing.
