Yummy Allergy-friendly Chicken Taquitos
Great dinner idea for families with food allergies! We like this with white rice and chips and salsa.
Yummy Allergy-Friendly Chicken Taquitos
You will need:
2 C Cooked Chicken (I usually bbq a few extra chicken breasts and slice them up in my food processor)
Olive Oil
Few cloves of garlic
1 T Dried minced onions
1 T Dried parsley
1 T Chili powder
1 T Cilantro
1 t Cumin
Chicken broth
Corn tortillas
Put a tablespoon (or so) olive oil in a frying pan and heat. Add garlic and cook stirring frequently until tender. Add onion, chili powder, cumin, and parsley. Add chicken and cilantro, making sure to coat with garlic onion mixture.
Heat chicken broth in a shallow pan. Dip a corn tortilla in broth for a few seconds making sure to coat both sides. Add a few tablespoons of chicken mixture to center of tortilla. Roll tortilla placing seam side down in an oiled (olive oil or coconut oil works well) baking dish. Continue until you have used all the chicken mixture.
Brush tortillas with olive oil. Bake at 425 degrees for 15 minutes.
