Chile Kangaroo Fillets

Kangaroo marinated with chile and rosemary.
Ingredients
- 500g of kangaroo fillets
- 6 fresh chillies
- fresh rosemary sprigs
- 150mls olive oil
- salt and pepper
Method
- Coat the kangaroo fillets all over with olive oil, chilli and rosemary sprinkle some to salt and pepper over them and place in a container to marinate over night in the fridge.
- Heat a large saucepan and place the fillets in and seal both sides.
- Preheat the oven at 200c .Put the fillets on to a tray and place into the oven for 15 minutes.
- Remove from oven and let it sit for 5 minutes.
- Serve with vegetables
