Chile Kangaroo Fillets

Kangaroo marinated with chile and rosemary.

Ingredients

  • 500g of kangaroo fillets
  • 6 fresh chillies
  • fresh rosemary sprigs
  • 150mls olive oil
  • salt and pepper

Method

  1. Coat the kangaroo fillets all over with olive oil, chilli and rosemary sprinkle some to salt and pepper over them and place in a container to marinate over night in the fridge.
  2. Heat a large saucepan and place the fillets in and seal both sides.
  3. Preheat the oven at 200c .Put the fillets on to a tray and place into the oven for 15 minutes.
  4. Remove from oven and let it sit for 5 minutes.
  5. Serve with vegetables
