Chipolte – Red Bean and Sweet Potato Chili

Amazing vegetarian chili that the whole family will love.

This delicious recipe serves 4
Ingredients
- 1 tablespoon olive oil
- 1 medium – size yellow onion, chopped
- 1 medium size red bell seeded and chopped0
- 1 large garlic, minced
- 1 tablespoon chili powder or more to taste
- 1 1/2 ponds of sweet potato peeled and cut into chinks
- 1 14 oz can of crushed tomatoes
- 1 15 oz can of kidney beans drained and rinsed
- 1 1/2 cups of water
- 1 tablespoon canned chipolte chili’s.
- Salt to taste.
Method
- Heat the oil in a large skillet over medium heat. Add the onion, bell pepper and garlic. Cover and cook until soft, about 5 minutes. Stir in the chili powder and cook for 30 seconds. Add the sweet potato’s and stir to coat with spices.
- Transfer the mixture to a 4 to 6 quart slow cooker/ crock pot. Add the tomato’s beans and water. Season with salt, cover and cook on low for 6 to 8 hours.
- When ready to serve stir in the chipoltes and serve with salad and corn bread on the side.
Approximately 368 calories per serving.
