Chipotle-bacon Salsa

Start to finish: 15 min.
Makes one c.

1 tbsp. olive oil

1/4 lb. slab bacon, rind removed, cut into 1/4″ cubes

10 oz. can diced tomatoes, drained

1/2 red onion, diced

1 tbsp. chipotle puree

1 tsp. lime juice

Freshly ground black pepper, to taste

In lg. skillet, heat oil over med.  Add bacon, then reduce heat to med.-low & cook for about 7 min. or til lightly browned.  Transfer bacon to paper towl-lined plate to drain excess fat.

In med. bowl, toss tomatoes, onion & chipotle puree.  Stir in bacon, lime juice & black pepper.
