Christmas Eve Dinner: First Course
Make your Christmas Eve Dinner special with these first course recipes.
Conchiglie con Aragosta e Spinacci
(shells with lobster and spinach)
For 4
Ingredients
- 1 lb of shells
- 1 lb of fresh spinach, washed and chopped
- 8 ounces of cooked lobster meat
- 4 tblsps of olive oil
- 1 onion chopped finely
- 1 tblsp of lemon juice
- ¼ cup of cream
- 8 ounce dried mushrooms
- 2 tblsps of grated parmigiano
- Pinch of salt and pepper
Preparation
- Cut lobster meat into small chunks. In bowl blend lemon juice with olive oil. Let stand for 15 minutes. Place dried mushrooms in 1 cup of warm water and let sit for 15 minutes.
- Place butter in sauté pan with chopped onion and spinach. Saute for 5 minutes. Add in mushrooms, lobster meat, cream and let boil.. Cook pasta till al dente. Drain.
- Place in sauce and toss. Place in individual serving plates. Drizzle with olive oil/lemon sauce and sprinkle fresh parsley on top.
Orrechiette con Patate
Ingredients
*1 lb of Orrechiette pasta
*1 lb potatoes
*2 cloves garlic
*1 whole hot red pepper
* 2 tblsps olive oil
*1 tsp of kosher salt
Preparation
Peel and cut potatoes into chunks. Place into a pot of boilin water with 1 tsp of kosher salt In separate pan, sauté 2 tblsps of olive oil with hot red pepper and finely chopped garlic till garlic becomes golden. Remove from heat.
Cook pasta in salted water till al dente then drain.
When potatoes are cooked ,drain. Add potatoes into garlic mix and toss. Add in pasta and toss gently. Serve hot.
Farfalle con Tonno
(bow tie pasta with tuna)
Ingredients
*1 lb of pasta
*8 ounces tuna in olive oil
*1 clove garlic
*3 tblsps of extra virgin olive oil
*2 tblsps of chopped parsley
Preparation
In small bowl, with wire whisk, mix together olive oil, lemon juice, pinch of salt and pepper. Cut garlic clove in half. Rub garlic cloves on bottom of large salad bowl. Flake pasta in separate dish. Boil pasta till al dente, drain. Place in large salad bowl and top with dressing and flaked tuna, Toss. Serve with chopped parsley on top.

The farafalle pasta with tuna sounds great for a Christmas Eve main course.
