Cowboy Mince – Easy Mince Meat Dish

Great easy dish made with mince and beans. – Feeds two.
- 250 grams of minced meat
- 2 slices of streaky bacon
- Half a can (or small can) of kidney beans
- Half a can of tomato
- 1 onion
- 1 clove of garlic
- 1 teaspoon of mustard
- A dash of vinegar
- 250ml White wine
- Rice / Toast
- Chop the onion and garlic roughly and fry with a small amount of olive oil until brown.
- Add the bacon and fry until cooked.
- Add the mince with but before stirring it, add a teaspoon of mustard and a dash of vinegar.
- Stir the meat and allow to brown.
- Add the white wine and turn to a low heat. Cook until the meat starts to stick to the bottom and then switch the heat off.
- Add to rice or toast depending on your need. Cowboys would have used toast!
This is a favourite of mine. You can also make it into a nachos, by adding it on to some tortilla chips and adding guacamole.
