Crispy Bacon and Noodle Stir-fry

Tantalize and titillate your taste buds; in next to no time flat, with this easy to make super-fast crispy bacon and Chinese egg noodle stir-fry. Adding a teaspoon of soy sauce will give this dish an exotic oriental overtone.

Crispy Bacon and Noodle Stir-Fry Ingredients:

  1. 250g of Dried Fine Chinese Egg Noodles
  2. 6 Slices of Bacon
  3. 2 Zucchini
  4. 1 Red Onion
  5. 1 Clove of Garlic
  6. 2 Teaspoons of Sunflower Oil
  7. 2 Teaspoons of Balsamic Vinegar
  8. Freshly Ground Sea Salt (for seasoning)
  9. Freshly Ground Black Pepper (for seasoning)

Method:

  1. Remove rind and trim excess fat from the bacon
  2. Cut bacon into 2cm (about 1”) pieces
  3. Peel and cut the onion into very thin wedges
  4. Peel and crush the garlic clove (a garlic press is the easiest way to do this)
  5. Trim and diagonally slice the zucchini
  6. Using a large non-stick frying pan, dry-fry the bacon pieces for 3-4 minutes or until the bacon becomes lightly browned and crisp
  7. Using a slotted spoon remove the bacon pieces from the frying pan, allowing any excess fat to drip off, then transfer the lightly browned crispy bacon pieces into a small bowl and set aside
  8. Add 2 teaspoons of sunflower oil to the frying pan and heat for a few seconds to bring the sunflower oil up to cooking temperature
  9. Stir in the onion wedges and continue stir-frying for another 2 minutes
  10. Add the diagonally cut zucchini and the crushed garlic clove
  11. Cook for another 4-5 minutes or until tender
  12. In the meantime, bring a pot of water to the boil
  13. Add the 250g of dried fine Chinese egg noodles and cook for three minutes or until the noodles are just tender
  14. Using a fine mesh sieve drain the noodles thoroughly
  15. Once the zucchini is tender sprinkle it with 2 teaspoons of balsamic vinegar
  16. Season to taste with freshly ground sea salt and freshly ground black pepper and continue cooking for another 30 seconds or so
  17. Now add the cooked Chinese egg noodles to the zucchini mixture
  18. Gently toss together over a low heat to mix
  19. Serve when ready

Serving:

  • Spoon stir-fried noodles mixture onto warmed plates
  • Sprinkle with the bacon pieces and enjoy
  • Serve accompanied with toasted dinner rolls or garlic bread and enjoy
  • Serves 4

Variations:

One very popular variation of this crispy bacon and noodle stir-fry is to add a teaspoon of Worcestershire or soy sauce at the same time as you add the balsamic vinegar as this will produce a dish with a more oriental feel
