Baked Lobster and Rice

Hi everyone, I wanted to share with you this recipe called baked lobster and rice.It’s easy to make and sure you will love it.

Ingredients:

1/4 pound ( 1 stick butter)

1/2 cup minced onion

1 clove garlic, minced

4 tablespoons flour

3 cups chicken broth

2 tablespoons tomato paste

1/2 cup dry sherry (optional)

1 pound cooked lobster meat,diced

1 can green peas drained

1/4 cup chopped parsley

1 teaspoon salt

1/2 teaspoon freshly ground black pepper

3 cups cooked rice

1/2 cup grated cheese

Method:

Melt half the butter in a saucepan; saute the onion and garlic 5 minutes, stirring frequently. Blend in the flour. Gradually add the broth, stirring constantly to the boiling point. Mix in tomato paste. Cook over low heat for 15 minutes. Add the sherry, lobster, parsley, salt and pepper. Cook over low heat for 5 minutes. Mix in the rice and taste for seasoning.

Pour the mixture into a 2-quart buttered baking dish. Sprinkle with the cheese. Dot with remaining butter. Bake in a 375 degrees oven 20 minutes, or until lightly browned.

    Oh I could never eat one of those little guys staring up at me. I would love the gravy you cook it in.
