Carpaccio of Cheese

Preparing carpaccio of cheese.

Ingredients

· 200 g Manchego cheese

· 2 pears

· 1 egg

· Raisins

· Pinions

· Arugula

· Oil

· Balsamic vinegar

· Pepper

· Salt

First Manchego cheese cut into thin slices and shredded arugula. Reserve a bit of arugula, and the rest is distributed in the source.

Then wash the pears and cut into thin slices, we distribute on the arugula, then cover the dish with the cheese slices.

In a blender container, put the arugula formerly reserved, egg, a splash of olive oil, salt and pepper. We beat until a thin sauce.

With the sauce, carpaccio and irrigate just decorated with a few raisins and pine nuts. Finally, we take a few drops of balsamic vinegar to your taste.
