Chicken a La Stanley
Here is a chicken dish that you want to have it every week.
This comes from Rumford Complete Cookbook
1 Three pound chicken
1/4 cup butter
1 sliced onion
1 1/2 Tablespoons flour
1 1/2cups of water or chicken stock
salt and pepper
1/2 cup cream
Cut chicken into pieces convenient for serving, wash, pat dry, then cook in hot butter for 10 minutes. Remove chicken, add onion to butter, and cook until it turns yellow. Add flour and when smoothly blended with butter, add water or stock and stir until boiling. Replace chicken, season, cover and cookuntil tender about 1 hour . And cream just before serving.
