Chicken Souffle

Here is a delicious recipe my mom tried on Sunday for the first time. It certainly was delicious.

2 Tablespoons butter

2 Tablespoons flour

1 1/2 cups milk

1/2 teaspoon salt

1/4 teaspoon pepper

1/2 cup soft bread crumbs

1/4 teaspoon grated lemon rind

1 cup minced cooked chicken

3 eggs

Blend butter and flour smoothly in saucepan, add milk and stir until boiling; cook three minutes and add salt, pepper, crumbs and lemon rinds. Cool, stir in chicken, add egg yolks, beaten until thick and fold in egg whites until beaten stiff. Bake in well greased pan in moderately hot oven (375F) about half and hour. 4-6 servings.

    I’ve never made a souffle, but I’ve always heard that it’s difficult to get right. Did your mom’s come out successfully on the first go?
