Create Your Own Gold Fork Fettucini All Alfredo

Fettucini Alfredo is just a simple dish that anyone can easily and quickly prepare at home.

If you are an American visitor in Rome, the first thing you are likely to do is pay a visit to Alfredo’s for a dish of his fettucini for which he was awarded – so the story goes – an 18-carat gold fettucini fork. But one of your problems might be to decide which of two Aldredos is the real and original Alfredo. Don’t let it worry you. Both restaurants do a fine fettucini and both will go through the ritual of presenting you with a “gold” fork. What many people don’t realize is that this is actually a simple dish, and one you can easily and quickly prepare at home.

Ingredients:

1 pound package slim egg noodles

salt

1/4 pound soft sweet butter

1/4 cup heavy cream

1 cup grated Parmesan cheese

freshly ground pepper

Cooking Instructions:

  • Boil the noodles in a large pot of salted water until tender but still firm (about 8 minutes should do it), drain and dry in a hot napkin.
  • Place the noodles on a heated platter or bowl, add the butter, cream, and half cheese, and toss until well mixed using two forks.
  • Serve topped with pepper and the remaining Parmesan cheese.
