Dad’s Baked Chicken

My father was a trucker, and when he was home he and I would spend time alone in the kitchen cooking.

1 whole chicken

2 tbs butter

1tbs each garlic powder, and onion powder

1/2 tbs each black pepper, and sage

6 scrubbed potatoes cut in 1 inch cubes

1 onion diced

3 carrots cut in 1 inch pieces

Mix the garlic and onion powders with the pepper and sage and the butter until well blended. Poke holes in the chicken breast and thighs and generously rub with the butter mixture making sure to mush the butter in to the holes. Place the veggies in a 13″ by 9″ pan lined in foil, than place the chicken on top of the veggies. bake in a 375 degree oven for about and hour till the chicken is 180 degrees and the veggies are done.

i also suggest seasoning the veggies before placing the chicken on top with the garlic and onion powders with the pepper and sage also for a little extra flavor.
