Date and Nut Squares

A healthy and iron rich sweet treat.

 Date and Nut squares:

Ingredients:

2 cups dates (pitted and chopped)

1/2 cup almonds

1 cup walnuts

2-3 tbsp milk

2 tbsp clarified butter(ghee)

Method:

1.  Finely chop the almonds and walnuts and keep aside.

2. In a heavy bottomed pan, heat the butter and put in the dates.

3. Fry for a few minutes and add the milk, lower the heat.

4. Keep on stirring and pressing the dates with the back of a wooden spatula. Add a tsp of milk if it is too dry to work with.

5. Continue so until a pulpy consistency of the dates is formed. Take care that the pulp should not be too soft.

6. Now add the nuts and mix well. Turn off the heat.

7. Let the mixture cool.

8. Line a disposable foil tin with cling wrap.

9. Ladle out the date mixture and spread it evenly.

10. Cover with cling wrap and refrigerate.

11. When set, cut into squares and store in the refrigerator.

Serve these squares with a glass of milk for those busy mornings with no time for elaborate breakfasts.
