Dinner: Butterfly Chicken and Saffron Rice
I decided to share two things we always put together for dinner. It is one of my favorite dinners.
Modern Family Cookbook
Butterfly chicken
6 small chicken breasts
1 teaspoon salt
1 teaspoon garlic salt
1/2 cup melted butter
Remove skin from chicken and cut meat from bones (save to make broth) with thin, sharp knife, leaving meat whole. Sprinkle with salt and garlic salt. Open the breasts butterfly style placing in a greased shallow baking pan with rounded side up and brush with butter. Bake in moderate oven (375F), 50 to 60 minutes, or until browned and tender, brushing twice with butter
Saffron rice
2 [14 ounce cans]hicken broth
1/4 teaspoon saffron
1/4 cup butter
2 Tablespoons finely chopped onion
1 bay leaf
1/2 teaspoon salt
1/4 teaspoon pepper
1 1/2 cups long grained rice
Heat broth and add saffron and let stand one hour; strain. melt butter in skillet with tight cover and add onion, seasoning and rice. Cook over medium heat until rice is a light golden color. Add saffron broth and bring gto rapid boil. Turn heat low and cook, covered, 14 minutes. Turn off heat, steam 5 minutes, remove bay leaf. Yields 6 cups.
