Fettuccine Alfredo

Fettuccine Alfredo is a delicious main course meal or a side dish. This rich and flavorful pasta dish consists of heavy cream, butter, shallots, garlic, and of course your choice of the dry Fettuccine pasta (spinach, wheat, egg).

Fettuccine Alfredo is a delicious main course meal or a side dish.  This rich and flavorful pasta dish consists of heavy cream, butter, shallots, garlic, and of course your choice of the dry Fettuccine pasta (spinach, wheat, egg).  This is also a simple recipe, but very delicious and flavorful.  So simple, but so so good. Most of us in know this dish in its cream-based form, with a little nutmeg sprinkled on top.

Ingredients

1 Pound Dried Fettuccine

6 Tbsp. Unsalted Butter

1 shallot, minced

1 Garlic Clove, minced

1 Cup Heavy Cream

1 Cup Finely Grated Parmigiana-Reggiano Cheese

1/4 Tsp. Freshly Ground Black Pepper

1/8 Tsp, Ground Nutmeg

Fresh Italian Parsley (flat leaf), for garnish 

Directions

Cook the fettuccine in a pot of rapidly boiling salted water until al dente. Drain pasta,  reserving 1/4 cup of the pasta cooking liquid. 

While the pasta is cooking, melt the butter in a medium saucepan over low-medium heat. Add shallots and garlic and saute until tender. Whisk in heavy cream and bring to a light boil.  Simmer until sauce has reduced slightly, about 5 minutes. Remove from the heat. 

Return the pasta to the pot it was cooked in, set over medium-high heat along with the reserved cooking liquid. Add the butter-cream mixture and half of the Parmigiana-Reggiano Cheese and toss to combine thoroughly. Season with pepper, to taste.  Sprinkle with remaining Parmesan and garnish with ground nutmeg and snipped fresh Italian parsley. Serve immediately.

    I eat this as main meal, pasta is never a side dish for me.:)
