Grandma Anna’s Risotto with Beer
A very unusual, tasty and easy recipe for risotto.
Ingredients for 4 people:
400 gr. rice -
1 small onion -
70 gr. butter -
3 tablespoons olive oil -
1 bottle of dark beer -
3 cuchiai of cream -
broth -
gr. 75 grated Parmesan cheese -
Salt and pepper

Preparation:
Finely chop the onion in a saucepan with 50 gr. of butter and oil and sauté very slowly, then add the rice and stir it continuously in the sauce. Then pour the beer very slowly, being careful not to create a foam, while stirring constantly with a wooden spoon. When you have poured all the beer and rice will be mostly dry it will have assumed a light brown colour. Then start pouring the cream little by little and whisk the mixture well again with the wooden spoon. Let the cream dry and be absorbed by the rice then sprinlke salt and pepper, then add a ladle of hot broth, one at a time, cook until the rice is completely cooked , stirring frequently and being careful that it does not stick to bottom of the pan. Once cooked, remove from heat, add the remaining butter and cheese. Stir again to mix the rice well. Serve
