Ground Turkey Nachos

This is my healthy rendition of Nachos. It’s great football finger food. Call this one game night delight.

Ingredients

  • 1 Lb Ground Turkey
  • 2 Large Cans Whole Sunvista Pinto Beans (May use homemade)
  • 1 Bag Mexican Cheese Blend
  • 1 Large Can Graber Olives (sliced thin)
  • White Wine
  • 1/2 Lime
  • 3 Ripe Hoss Avocados (Remove peelings and pits)
  • 4 Large Tomatoes Chopped
  • 3 Large Serrano Chili’s Finely Chopped (Remove seeds and veins)
  • 2 Large Garlic Cloves Crushed
  • 1/2 Yellow Onion Diced
  • 2 Green Onions Finely Chopped
  • 1/2 A Bushel Of Cilantro Chopped
  • 2 tsp Ground Cumin
  • 4 tsp Sea Salt
  • 1/2 tsp Garlic Powder
  • 1 1/2 tsp Ground Black Pepper
  • 1/2 Cup Olive Oil or Grape Seed Extract
  • 1 Container Mexican Cream (Can Substitute For Low Cal Sour Cream)
  • 1/2 Cup of water
  • 1/2 Cup of milk
  • 1 Bag Tortilla Chips ( I go to my local Latin meat market and buy fresh chips, tastes better!)

Ground Turkey

Place fry pan over medium high heat.  Brown turkey for about 8 minutes in quarter cup oil then add, one teaspoon cumin, one garlic clove, yellow onion, one teaspoon pepper, splash of wine and two teaspoons salt.  Continue to brown until turkey is done and ingredients are well blended. 

Re fried Beans

Rinse beans under cool water and strain.  Place sauce pan over medium heat.  Add remaining oil, cumin, garlic, half of the tomatoes, one teaspoon salt, 1/4 cup of milk, water and beans.  Allow ingredients to simmer about fifteen minutes and mix occasionally (never leave unattended).  When all ingredients have softened mash beans and turn off heat.

Guacamole

In separate bowl, mix avocado, 1/4 cup of milk, one teaspoon salt and garlic powder .  Mash ingredients together.  Finally, squeeze lime into mixture and fold until well blended.

Nachos

Layer individual servings or on one large platter as follows;  Tortilla Chips, beans, turkey, cheese, tomatoes, olives, green onions, Serrano chili, cilantro, guacamole and a drizzle Mexican sour cream all over!

Makes about 8 to 10 servings
