Hodge Podge (Vegetable Dinner)

This is a traditional dish, especially in the maritimes. It is a blend of fresh string beans, snow peas, carrots and new potatoes in a rich cream sauce.These vegetables will have such greart flavour!

Hodge Podge

  • 1 lb. green string beans, cut in 1 inch pieces
  • 1 lb. yellow string beans, cut in 1 inch pieces
  • 1 lb carrots, cut in 1 inch chunks
  • 1 lb potatoes, cut in wedges
  • 1 lb.snow peas, cut in 1 inch pieces
  • 1 cup heavy cream
  • 2 tablespoon butter
  1. Prepare the new fresh vegetables.
  2. Cook the beans, carrots and peas until about 1/2 done.
  3. then add potatoes
  4. Cook until the potatoes are “just” done. DO not over cook.
  5. Drain off water, reserving 1 1/2 cup.
  6. Add cream and reserved water to the vegetable mixture.
  7. Lastly add 2 tablespoon of butter.
  8. This makes a delicious dish of fresh vegetables, just full of flavour.

    Interesting recipe. I would cook the carrots and potatoes first, and add the other veggies last, because I like my vegetables a little crisp.
