Hodge Podge (Vegetable Dinner)
This is a traditional dish, especially in the maritimes. It is a blend of fresh string beans, snow peas, carrots and new potatoes in a rich cream sauce.These vegetables will have such greart flavour!

Hodge Podge
- 1 lb. green string beans, cut in 1 inch pieces
- 1 lb. yellow string beans, cut in 1 inch pieces
- 1 lb carrots, cut in 1 inch chunks
- 1 lb potatoes, cut in wedges
- 1 lb.snow peas, cut in 1 inch pieces
- 1 cup heavy cream
- 2 tablespoon butter
- Prepare the new fresh vegetables.
- Cook the beans, carrots and peas until about 1/2 done.
- then add potatoes
- Cook until the potatoes are “just” done. DO not over cook.
- Drain off water, reserving 1 1/2 cup.
- Add cream and reserved water to the vegetable mixture.
- Lastly add 2 tablespoon of butter.
- This makes a delicious dish of fresh vegetables, just full of flavour.

Interesting recipe. I would cook the carrots and potatoes first, and add the other veggies last, because I like my vegetables a little crisp.
