Holiday Recipes: Apple Macaroon Pudding

published by pattiann on Nov 19, 2011

Here is an unusual way to use macaroons during the holiday instead of just cookies. Serve this Christmas evening with your ham or turkey.

3 cups applesauce

1/2 cup finely chopped almonds

1 cup crushed macaroon

2 Tablespoons melted butter

Put a layer of applesauce into buttered baking dish, sprinkle with half almonds and half macaroons into which the melted butter has been stirred, Repeat layers ad bake 20 minutes in moderately hot oven 350F Serve hot or cold perhaps you can serve it with light cream or boiled custard. We are making this this year and are going to eat it without cream or custard.
