Parmesan Cheese Noodles with Bread Crumbs
My grandmother made this for me when I was a little girl. To this day it is one of my favorite comfort foods.
8 oz. package wide noodles, dry, uncooked
4 Tablespoons butter
1/4 cup vegetable oil
2 large cloves garlic pressed through a garlic press
2 Tablespoons finely chopped parsley
1/2 teaspoon salt
1/4 teaspoon pepper
1/3 cup crushed Ritz crackers
1/4 cup grated parmesan cheese
Cook noodles as directed on package. A minute or two before noodles are done, in medium frying pan, begin melting butter over low heat. Add oil. stir to blend until butter is melted. Stir in garlic, parsley, salt and pepper. Heat gently just enough to get ingredients hot but not hot enough to bubble. Drain noodles. Put in bowl when drained. Remove butter mixture from heat. Add crackers and parmesan cheese. Stir with a small whisk or fork. Pour over noodles. Toss gently to coat.
