1 x 375g pack ready-rolled puff pastry
75g (3oz) butter
100g (4oz) caster sugar
1 x vanilla pod or 1tsp vanilla bean paste
600g (11b 5oz) plums, halved
25g (1oz) flaked almonds, toasted
you will need:
1 x 20cm (8in) diameter tatin dish
1 Heat the oven to 200 C, 180 С fan, 400 F, gas 6. Round off the long sides of the pastry to make it 5cm (2in) larger than the tatin dish.
2 Melt the butter in a pan and stir in the sugar and vanilla when the butter foams. Add the plums, rounded side down, and cook over a high heat until the butter and sugar have caramelised.
3 Transfer the plums to the tatin dish and lay the pastry over the top, tucking in the edges. You can prepare it up to this point and keep it in the fridge for up to 8 hours ahead. When ready to cook, bake for 25 minutes, until the pastry is risen and golden. To serve, invert the tart on to a plate and scatter over the almonds.
