Roasted Red Bell Pepper Pimiento and Cheese
Kids and adults alike will love this fresh take on pimento and cheese.
One of my favorite summer recipes is pimiento and cheese. It is cool and doesn’t sit to heavy. This recipe only takes 25 minutes to make. It makes four cups of pimiento and cheese.
Ingredients
- 1 ¼ cups of mayonnaise
- 6 ounces of roasted red bell pepper (can use jar or freshly made.)
- 2 tsp of finely grated onion
- 10 ounces of hoop cheese
- 10 ounce of white cheddar cheese
- ½ tsp of red pepper
- ¼ tsp black pepper
- ¼ cup of parsley
Method
Dice and chop the red bell pepper.
Place into large mixing bowl.
Add mayonnaise, spices, and onion; combine well.
Use the largest holes in a box grater to shred cheese
Add cheese to mixing bowl.
Combine well and cover the tightly with plastic wrap
At this point, the pimiento and cheese is ready to eat. Just garnish with parsley before serving on a hot summer day. However, I suggest letting it sit in the refrigerator for 2-4 days before consuming. This recipe also makes a great appetizer for summer parties. Just serve with an assortment of crackers, melba toast, bread sticks, or cut sandwiches into mini shapes.

Red Bell Peppers have nearly 4X as much vitamin-C as an orange, a very healthy vegetable.
