Saturday Morning Pancakes

My pancakes used to burn on the outside and be dough-ey on the inside, until I discovered this recipe.

Ingredients:
Flour, self rising white, 1 1/4 cup (remove)
Granulated Sugar, 2 tsp
Egg, fresh, 1 large
Melted Butter, salted, 2 tbsp 

In a medium to large bowl, melt butter in microwave.  Add  sugar and mix well.  Add egg and flour and mix well.  You may also add 1/2 cup of diced fruit of your choice or 1/2 cup chocolate chips.

Coat a non-stick skillet with cooking spray or oil.  Place over medium heat. When a drop of water “dances” on the surface, the skillet is ready.

Pour batter into skillet by 1/4 to 1/3 cup (depending upon the size of pancakes you like).  When the edges of the pancakes begin to look dry around the edges and the center starts to bubble, they are ready to flip.  Cook on the other side until you can see that they are beginning to brown.

Serve with butter or peanut butter and warm syrup.
