Seasoned Lime Rice

This is a rice recipe made with lime. Lime is the main ingredient and can be eaten with out any gravy.

Ingredients1/4 cup clariified butter

  • Juice of 4 limes
  • 1/2 tsp mustard seeds
  • 1 bay leaf, crumbled
  • 1 tsp turmeric
  • 2 cups rice, half cooked and drained
  • 1 cup chopped cashewnuts
  • 1/2 tsp cayenne pepper
  •  1 cup grated unsweetened coconut
  • 1 tsp of salt
  • 1 tblspn chopped coriander leaves optional

Method

Heat the butter in a pan, and fry mustard seeds until they pop. Add bay leaf, turmeric, chopped cashewnuts, cayenne pepper and salt. Fry over very low heat for 3 minutes, stirring constantly. Add to it rice, along with coconut, coriander leaves and lime juice and mix well. Cover tightly and put in a 350 degree oven for 15 minutes
