Soy with Spinach

Benefits of soy include promoting heart health and healthy bones, preventing cancer and alleviating menopausal symptoms.

Ingredients

  1. Soy Chunks                -  100 gms.
  2. Spinach                      -  1 Kg.
  3. Butter                        -  10 gms.
  4. Bayleaf                      -  1 No.
  5. Onion Chopped         -  100 gms
  6. Ginger-Garlic Paste   -  1 tbsp
  7. Red Chilly Powder     -  1/4th tsp
  8. Corriander Powder   -  1 tsp
  9. Turmeric Powder       -  1 tsp
  10. Salt                           -  To Taste

Method

1.   Soak soy chunks in warm water for about 20 minutes.  Squeeze to remove excess water.

2.   Wash spinach 4-5 times and then chop finely.

3.   Heat butter in a pan, add bayleaf and chopped onions.  Cook until slightly brown.

4.   Then add ginger-garlic paste.  Cook for a minute.

5.   Then add red chilly powder, turmeric powder, again cook for 2-3 minutes.

6.   Add chopped spinach and soy chunks and continue cooking ill done.

7.   Serve hot.
