Strawberry Crepes

Excellent for breakfast, lunch or dinner. These light wonderful treats are easy to make and wonderful to eat. Enjoy!

Ingredients – Filling

  • 2 cups strawberries
  • 1 cup cream cheese
  • 5 tbsps sugar

Ingredients – Batter

  • 11/4 cups all purpose flour
  • 2 eggs
  • 1 cup milk
  • 2 tbsps butter, melted
  • salt
  • 2 tbsps sunflower oil
  • 1 tbsp confectioner’s sugar

Method

  1. Wash and hull the strawberries. Halve or quarter one third of the berries and set aside.   Puree the remainder in a blender or food processor.  Mix together the strawberry puree, cream cheese, sugar and the reserve berry pieces.
  2. Sift the flour into a bowl, and beat in the eggs and milk.  Stir in the melted butter and a pinch of salt.
  3. Heat a little oil in a skillet over a medium hea.  Fry 4 crepes, adding more oil as necessary.
  4. Place the crepes on 4 individual dessert plates.  Divide the strawberry filling equally between the crepes and fold into quarters.  Sprinkle with the confectioner’s sugar and serve immediately.

Tip: Fresh or thawed frozen raspberries may be substituted for strawberries.
