Stuffed Baked Tomatoes

Stuff it up.

6 medium firm-ripe tomatoes

1/4 cup minced onion

1 1/2 cups fresh or frozen corn kernels

1/2 cup shredded Monterey Jack cheese

Salt and pepper to taste

3 tablespoons butter

1 clove garlic, minced

2 medium green bell peppers, finely chopped

2 tablespoons fresh coriander, minced

Fresh coriander sprigs

Method: Preheat oven to 350f. Grease a shallow baking dish. Trim stems off tomatoes, and then discard. Scoop out pulp, leaving 1/2-inch-thick tomato shells. Take shells and invert on paper towels and drain. Chop and drain pulp, then reserve. Heat butter in skillet over medium heat until hot. Add onion and garlic. Saute’ for three minutes, until soft. Add tomato pulp and saute’ for one more minute. Add corn and peppers. Saute’ until corn is crisp-tender, for about three minutes. Remove from heat and let stand ten minutes or until slightly cool. Add cheese, coriander, salt and pepper. Mix well. Spoon mixture into the tomato shells. Place shells in baking dish and bake 15 minutes or until vegetables are heated through. Serve with coriander spigs as garnish.

    I sure wish I could taste this. It sounds delicious. I would rather have someone else cook it for me than do it myself though.
