Welshcakes

This is my take on my mother-in-law’s recipe, she’s still making it at 94! You will need a smooth griddle or a cast iron frying pan to cook these.

Ingredients

250gr self-raising flour

125gr butter, dices

75 gr caster sugar, plus a little more for sprinkling

100gr sultanas

1 large egg, beaten

¼ tsp ground allspice

Method

Rub the butter into the flour as if you were making pastry, then stir in the sugar, spice and the dried fruit, Add the egg, the dough should be soft but not sticky. Form into a disc, cover with clingfilm and leave to chill for 20 minutes.

On a floured surface, roll out the dough to about ¾ cm thickness and cut into rounds. Preheat your ungreased pan and cook the discs for about 3 minutes each side, they should be golden brown. Place on a plate and sprinkle with sugar.
