Whipped Brandy Butter.
Hands-on time lOmin, plus chilling. Serves 8
I50g (5oz) unsalted butter, at room temperature
I50g (5oz) golden icing sugar, sifted 3tbsp brandy
1 Put the butter in a bowl and whisk to soften. Gradually add the icing sugar, whisking as you go, until it’s almost used up, then, just before adding the final amount, pour in the brandy. Continue whisking until the mixture is pale and fluffy, then spoon into a serving dish.
2 Cover and chill until needed. Remove from the fridge 30min before serving. PER SERVING 226cals, l5gfat (log saturates), 20g carbs (20g total sugars)
