Whiskey Shortcakes

These are very rich cakes- the type that melts in your mouth!

Whiskey Shortcakes

  • 1/2 lb. butter
  • 1 egg yolk
  • 1/2 cup icing sugar
  • 1/4 cup whiskey
  • 1 tablespoon grated orange rind
  • 1 1/2 cups sifted flour
  • orange marmalade
  • icing sugar
  1. Cream the butter until fluffy ( use electric mixer)
  2. Add the egg yolk, icing sugar and whiskey.
  3. Continue beating for 5 minutes.
  4. Sprinkle the orange rind over the batter.
  5. Gardually add the flour, stirring with a wooden spoon until smooth.
  6. Drop from a teaspoon onto an ungreased cookie sheet.
  7. Drop a tiny bit of marmalade onto the top of each cookie.
  8. BAke at 350 oven for 10 – 15 minutes or until they are delicately browned.
  9. Transfer to a rack and let stand until cool.
  10. Dust the tops with icing sugar (put through a sieve).
  11. Makes 4 dozen.

    These whiskey shortbread cookies sound like they would be the perfect thing to take to a cookie exchange this Christmas.
