Far Winds Casserole

This one is definitely comfort for the soul food. Tasty casserole that livens up ground beef. And best of all, if you made it right…it’s green.

I’m not sure why it’s called Far Winds Casserole but my family made this a lot when I was growing up.  And boy did it sure hit the spot.  A ground beef casserole that tasted good and made your insides warm.  I still make it today when I want something to remind me of home and fill not just the void in my stomach but the one in my soul too.

There is one unusual thing about this casserole though, it’s green.  This didn’t bother me as a kid or seem strange in any way.  The first inkling I had was when I as an adult started making it for people and the first words out of their mouths was always – Oh my goodness…”it’s green”.  REALLY GREEN.

So without further ado here’s what you need.

Ingredients

  • 1 lb ground beef
  • 5 celery stalks, diced
  • 1 large or 2 medium onions, diced
  • 1 green pepper, diced
  • 1 can water chestnuts
  • 1 can cream of celery soup
  • 3/4 can water
  • 3/4 can milk or cream
  • 1 bag crunchy chow mein noodles
  • 1 – 4 heaping tsp of green curry powder (the regular curry spice you find on the shelf labeled just “curry”, this is usually a blend)
  1. Method

  2. Preheat oven to 400 degrees.
  3. Dice all your vegetables while browning the ground beef. 
  4. Add the soup, water, and milk/cream and mix.
  5. Add 1 heaping teaspoon of curry powder.  Mix thoroughly.  Let simmer for 2 minutes and then taste.  Add more curry powder to your desired liking.  We usually went with 2-3 teaspoons.
  6. Add vegetables and water chestnuts and 1/2 bag of the crunchy chow mein noodles.  Mix well.
  7. Pour mixture into a 13 X 9 baking pan.
  8. Top with remainder of crunchy chow mein noodles.
  9. Bake in oven for approximately 45-60 minutes.

Serve and enjoy!

By the way, I did warn you.  It’s green.
