Fillet of Sole Meuniere

Fillet of Sole Meuniere is tasty recipe.

Ingredients:

4 fillets of sole (1 pound)

¼ cup flour

1 tbsp salt

¼ tbsp white pepper

3 tbsp special margarine

1 tbsp minced parsley

2 tbsp lemon juice

Procedure:

Wash and dry the fillets. Dip in a mixture of the flour, salt and pepper. Melt half the margarine in a skillet; cook the fish in it until browned on both sides. Transfer to a platter and keep hot. Pour off the fat and wipe skillet with a paper towel. Melt the remaining margarine in the skillet until it begins to turn brown. Stir in the parsley and lemon juice. Pour over the fish.

Serves 4.
