Bacon Wrapped Scallops
While I prefer to cook these on the Barbecue, they can be put under the broiler as well. Scallops are a mild shell fish and one of my favorites.
Bacon Wrapped Scallops with Pineapple

5 Slices Bacon, (cooked but not crisp)
1 Lb. Medium Scallops
1 Fresh Pineapple (canned chunks if out of season)
8 Grape Tomatoes
1 Sweet Onion, peeled and cut into chunks
1 Tsp. Worcestershire Sauce
1 Tbsp. Fresh Lemon Juice
3 Tbsp. Butter, melted (Olive Oil may be substituted)
12 Mushrooms, fresh and medium size – optional
Salt and Fresh ground black pepper to taste
12 wooden skewers

Cut cooked bacon into pieces so that pieces are long enough to wrap around scallops. Wrap all scallops with the bacon. Alternate pineapple, tomato, bacon wrapped scallops, onion and mushrooms* onto wooden skewers.
In a small mixing bowl combine Worcestershire sauce, lemon juice and butter and season with salt and pepper to your liking. Brush mixture generously over skewers and place on the grill. Cook for approximately 6 minutes, rotating skewers and basting ingredients during the cooking time. Serve with rice, zucchini squash and a green salad and enjoy!
